Danby Refrigerator: Danby refrigerator dar107a2wdd help

I have Danby refrigerator dar107a2wdd that won't get cold its cold in the morning but Immediately the temp changes upon opening the fridge. I vacuumed the back and bottom I have a lot of ice build up around the coil this model is a fridge only no freezer. I thought It might be the thermostat but this model looks like the thermostat wire is Incased within the spray foam insulation only the white tip is accessible. and not replaceable with out cutting the tip off and splicing on a new one. Any thoughts would be greatly appreciated

Thank you
